Ingredients:

20 oz Domestic Lamb Rack (approximately) 10 bones per rack
3 to 4 tablespoons Chefscents™ Hawaiian Coffee Steak & Chop Enhancer
1/4 cup Olive Oil

Procedure: Preheat oven to 400 degrees

  1. On a cutting board using a sharp knife cut the rack into 2/ five bone sections.
  2. Place the racks into a bowl evenly sprinkly the meat on all sides with the Chefscents™ enhancer; press the enhancer into the flesh.
  3. Using a large frying pan over high heat, allow the pan to preheat for a few minutes.
  4. Add the oil and carefully swirl it around to coat the inside of the pan.
  5. Into the pan place the racks meat side down and sear; also sear the ends and back side. Ensure they get an even nutty caramel color then remove from the pan.
  6. On a baking sheet place the racks with the fat cap side of the rack facing up and into a preheated 400 degree oven.
  7. Each rack will need to cook for approximately 9 to 12 minutes, to achieve medium rare.
  8. Remove from the oven and allow it to rest for 2 to 3 minutes before slicing.
